Easy Dinner Idea

After a long day at work, I don’t like to be in the kitchen for hours cooking and then have a sink full of dishes to clean. So…I started making my husband and I rice bowls for dinner. It’s like a healthier version of Chipotle.

Ingredients:

  • 1 package of Knorr taco rice
  • 1 can of black beans
  • 1 bag of lettuce (I prefer spring mix)
  • avocado
  • lemon
  • salt
  • pepper

I start by making a large pot of rice and a large pot of black beans so we can have leftovers throughout the week. Then, as the rice and black beans are cooking, I will cut open the avocado and smash it in a bowl. I then squeeze some lemon and add a pinch of salt and pepper. That’s my easy guacamole recipe. Now, I will get the bowls ready by adding spring mix to the bottom of them. When the rice and beans are ready, I will add those on top of the spring mix. Finally, I add a scoop of guacamole.

You can spice up the recipe by adding cheese, corn, salsa, tomatoes, steak, chicken, ground beef, ground turkey, tofu, or shrimp. Think of these rice bowls as a taco without the shell. The possibilities are endless! Enjoy!
